I have never made a ricotta based pasta before, but this past weekend I made some dunderi, from the cookbook Pasta By Hand. These ricotta dumplings are from the Amalfi coast of Campania. Here’s the pasta sauce I usually make with a secret ingredient – Walter Craft Caesar Mix. I bought a bottle of the mild spice mix a few weeks back and thought it would be a good additional to the sauce. And I think it’s all about the clam juice. I haven’t disappeared… just busy with work. This is the first handmade pasta recipe I have tried. It is a pinci from Tuscany, a rustic handmade pasta as long as spaghetti, but thicker (5-6mm when cooked). The recipe is from the cookbook Pasta by Hand by Jenn Louis (2015).
