This cake is made all over the nordic countries and has various names, including Skúffukaka in Iceland. It is made in a loaf or cake pan, and is traditionally coated with chocolate icing and desiccated coconut. In some respects it reminds me of a chocolate version of a Lamington. Fondue’s modern place at the Swiss culinary table is owed to the Swiss Cheese Union, or Schweizer Käseunion (SKU).
